Fall flavor from Fox Hill’s chef

Apple, bacon and turnip bisque is just what you need to keep warm as the seasons change. Fox Hill’s Chef spared no expense when creating this delicious and healthy dish.

APPLE, BACON AND TURNIP BISQUE

Ingredients:

¼ cup cubed bacon

1Tbsp butter

1 cup onion peeled and chopped

6 cup vegetable stock

½ cup carrot diced

½ cup parsnip diced

½ cup celery chopped

2 cups heavy cream

1 cup butternut squash diced

1 cup white wine

1 cup finely chopped greens

½ tsp salt

½ tsp cinnamon

½ tsp nutmeg

1 cup turnips cubed

2 cloves chopped garlic

3 green apples, peeled and cored

Chopped parsley or chives for garnish

Directions:

In a large saucepan, heat bacon and butter.  Cook until bacon is rendered.  Add onion, carrot, celery, parsnip.  Sauté 5 minutes over medium heat.

Add garlic and apple.  Then add wine and spices.  Sauté for another 5 minutes.

Add butternut, turnips and stock.  Stir well and bring to low simmer for 25-30 minutes.

Turn heat down and let sit for about 20 minutes to cool down.

Blend using a hand blender or Vitamix.

Return soup to pot, add green and simmer for about 20 minutes.  Add cream and simmer another 5 minutes.

Reserve in fridge until use or serve immediately with fresh herbs.
